Peanut Butter & Jelly Protein Pancakes



Now who doesn't love  peanut butter and jelly! With completion training underway, I can't afford a full on peanut butter and jelly sandwich, at least not the way I like it with PB&J oozing out the sides. 
Sundays are our protein pancake day and it is my cheat meal day so craving peanut butter and jelly I had to figure out a way to curb it. And then it came to me... A peanut butter and jelly pancake!

Ingredients: 

 

1/2 C.Ground Oatmeal
1/4 C. Coconut Flour

1/2 C. Vanilla Whey Protein Powder
1 TBSP ground flax seed
2 TBSP PB2
1/2 TSP Baking Soda
2 TBSP Peanut Butter
1 TSP Vanilla Extract
3 Egg Whites
1 1/4 C. Coconut/Almond Milk-Unsweetened
1/2 c Raspberries


Mix together all your dry ingredients then add the wet ones...

Mix thoroughly then add the raspberries.
 
You can add whatever type of berry you prefer but I had raspberries on hand.

Berries leave them out and you'll have wonderful Peanut Butter Pancakes that you can top with PB and honey or jam! YUM


Mix the berries in well leaving a few chunks.
Set your griddle to 300
 
Top your with coconut oil and pour batter on.Wait until the bubbles come through and flip! 

Makes 7 Pancakes


 

TADA!! Now that's what I call Happiness! Add Peanut Butter and Honey to the top!! HEAVENLY!

Chicken Sausage and Bell Pepper Omlete



I have to be honest and admit that breakfast is by far my most favorite meal of the day, especially on weekends! Weekends are the days we cheat... well according to us were cheating. My husband is the scrambled egg and omelet master while I make the pancakes! This time we had to try out our new Trader Joe's chicken sausage....

Ingredients:

1/2 c Egg Whites
1 Whole Egg
1 TJ's Chicken Sausage
1/4 c Red Bell Peppers
1/4 c Green Bell Peppers
Mexican Spices: (a couple dashes of each)
Onion Powder
Garlic Powder
Chili Powder
Cumin 
Pepper
Habenero Jack Cheese

Makes 2 Omelets

Dice up the sausage and peppers and set on the griddle. cook for apx 5 minutes.
In a small bowl beat together 1 whole egg, egg whites and spices. 

  

On the other side of the griddle pour the 1/2 of the egg mixture, sllloooowly so it doesn't run all over the pan. Add your cheese and when the egg is mostly cooked add sausage and veggies! Fold over in to a beautiful omelet! Then devour!!

Banana Protein Pancakes



I'm back from my work trip and SO EXCITED
to be home and of course there is nothing in our refrigerator... I wonder how my .husband lives while I'm gone, but he survives and that's all that matters. hehee, Love Him! Thank goodness we always have almond milk and egg whites! and of course, my baking cabinet is always prepared! Well since I'm home I was definitely in NEED of Protein Pancakes but wanted to make a different type.

Ingredients:

1 med mashed Banana 
1/2 C. Oat Flour
1/4 C. Coconut Flour
2 TBSP ground Flax seed
dash of cinnamon
1/2 C. Vanilla Whey Protein Powder
1 TBSP vanilla Extract
1 C. liquid Egg Whites
1 TSP Baking Powder/ Xanthan Gum 
1 C. Vanilla Almond Milk-Unsweetened

First, mash the banana with a blender.

Then mix in all the delicious dry ingredients.

Next, add the liquid ingredients...
beat well.

Preheat your griddle and top with coconut oil and pour the batter on.
Wait until the bubbles come through and FLIP!

When they're done top them with NATURAL maple syrup, Honey, PB, Almond Butter!... Or whatever Else!

Enjoy another Breakfast option!!


Almond Protein Pancakes


another batch of pancakes I get an! I know I get a little crazy but I woke up one morning and I just imagined and could taste and almonds pancake. And oh my good lord is it good! Now this one doesn't have the texture of traditional pancakes because I'm using ground almonds. It has more of a crunch  texture but I really like It. I did a couple plain ones that I had to throw some blueberries in there!

Ingredients:

1/3 C. Oat Flour
1/3 C. Coconut Flour
1/3 C. Almond Meal (ground Almonds)
2 TBSP Flaxseed
1/2 C. Vanilla Whey Protein Powder
1 TBSP Almond Extract
1 C. liquid Egg Whites
1 TSP Baking Powder
2 C. Vanilla Almond Milk-Unsweetened


Mix all the delicious dry ingredients together first!

Then add the liquid ingredients...
Once the batter is combined pour on to a well heated griddle, I set mine to 300 F
Then top with coconut oil :)

Wait until the bubbles come through like a normal pancake, and FLIP!

When they're done top them with NATURAL maple syrup, Honey, PB, Almond Butter!... Or whatever Else!

Oh these are so YUMMY! They have a neat crunch to them!

Protein Oatmeal

I was thinking that I probably should share my routine, daily, can't live without breakfast! Oatmeal! But this is not just any old plain oatmeal, this is flavorful yet sugar free healthy oatmeal!
I usually mix my oatmeal in advance and store in an airtight container. This makes mornings a lot quicker, and I use a protein scoop to measure my serving. 

But I'll show you how to make an individual bowl in case you don't have enough ingredients or the space to mix in advance.

1/4 Cup Oatmeal (either quick oats or whole oats)
1/8 Cup Vanilla whey protein powder
1/8 Cup Oat Bran
1 Tsp ground Flax seed

Then I cover all Ingredients with half water and half coconut milk, unsweetened of course. You could also use almond milk if you'd like. I stick it all in the microwave for 1:30 minutes, sure it and let it rest for about a minute then I microwave it again for 30 seconds.

it really does depend how you like your oatmeal, I like my oatmeal very cooked and mushy. 

Finally I top up with some cinnamon or PB2 mix and enjoy!!

Chicostick Protein Pancake


Sundays are the best with my husband. We ALWAYS get up I make a batch of Protein Pancakes and he makes a yummy dish of scrambled egg whites. This time when I got up and asked what kind of pancake he said "peanut butter and coconut." I responded "mixed together? or two different batches?" he said, "Mixed like a chicostick!" Oh MY Goodness! GENIUS! that's why I married him, so my creativity went to work...

I ALWAYS start off by grinding my oatmeal into oat flour and pull out all my
INGREDIENTS:
1/4 C.Ground Oatmeal
1/4 C. Coconut Flour
1/4 C. Coconut Shreds -Unsweetened
1/2 C. Vanilla Whey Protein Powder
1 TBSP Flaxseed
2 TBSP PB2
1/2 TSP Baking Soda
1 TBSP Peanut Butter
1 TSP Coconut extract
1/2 TSP Vanilla Extract
3 Egg Whites
1 1/4 C. Coconut Milk-Unsweetened

Mix together all your dry ingredients then add the wet ones...
Mix thoroughly.

Set your griddle to 300
Top your with coconut oil and pour....

Makes 6 LARGE Pancakes










 

 FLIP When the bubbles come through .

 Top your pancake with a little peanut butter, honey and coconut shreds.... YUMMM!

Blueberry Protein Pancakes



Another Happy Sunday with My husband! This morning we had BLUEBERRY Protein Pancakes! YUMM!


Something about the wonderful simplicity yet fresh taste of a blueberry makes things taste SO good!

 

 

Ingredients:

1/2 C. Ground Oatmeal (or any other flour you prefer)
1/4 C. Oat Bran
1/2 C. Coconut Flour
2 TBSP Flaxseed
1/2 C. Vanilla Whey Protein Powder
1 TBSP Vanilla extract
3. liquid Egg Whites
1 TSP Baking Powder
2 C. Vanilla Almond Milk-Unsweetened
2 C. Fresh or frozen blueberries


Makes 6 LARGE Pancakes


Mix all the delicious goodness together! Dry ingredients first!

Then add the liquid ones...
Heat griddle to 300 F
Then top with coconut oil :)

Once the batter is combined pour on and top with blueberries! As many or as little as you like :)

I like to use frozen organic blueberries that way I ALWAYS have them on hand :)

Wait until the bubbles come through like a normal pancake, and FLIP!

When they're done top them with NATURAL maple syrup, Honey, PB, Almond Butter!... Or whatever Else!

Here's my husbands portion... he goes crazy with syrup. HAHA

They're good cold too or the next day for leftover breakfast! MMMM

Protein Pancakes



There are a lot of different protein pancake recipes out there but all of them were missing something... I read though a bunch of them and.... AH HA!
Coconut flour! it makes all the difference. There is something special about coconut and NO, its not that because I'm from Hawai'i and I LOVE coconut either... It some how magically has a tenancy to sweeten recipes but without the sugar. Its decadent, I LOVE it and bake with coconut flour all the time! :) HAPPY HAPPY ME! If you love it just as much as I do can I recommend a great site that has it CHEAP, ORGANIC, and in BULK! HERE!
Hopefully this make you as excited as I am about CHEAP COCONUT!!!
