Banana Bread


Just like Grannys banana bread but WAY healthier and with all the fix-ins!

I love those days when I walk into the grocery store and they have bagged over ripe bananas on sale! Today was one of those days! When I see those sacks of bananas I can't help myself but buy them and think Banana bread, banana bread mmmmmm, grannies wonderful banana bread!

Like most of the time I bake I can never decide what flavor I'm going for a so in the case of a large recipe like this banana bread I can make two types easy. I always start off with the basics keeping in mind what I might want to change at the end, it's harder if the recipes are total opposites but when they can be pretty similar it makes it easy.

Ingredients:

  
3 medium bananas
1/2 cup whole wheat flour (or another type)
1 cup of oatmeal flour
1/2 cup coconut flour
1 c vanilla whey protein powder (or more flours)
1 tbsp vanilla extract
3 egg whites
2 tablespoons flax
1/2 cup of plain Greek yogurt
1/2 cup apple sauce
1/2 cup of almond milk
1/2 Nuts (optional)
1/2 Dark chocolate chips (optional)

Mix:

For banana bread I always start off with mashing my bananas in my mixing bowl.

Next add in the rest of the ingredients and mix well!

I always, ALWAYS add nuts to my banana bread! My choice is pecans but all types work. *When making multiple types I stir these in once the batter is in the loaf pan.

Heres the part where you make 2 types of banana bread, if desired :)
Once you combined all my basic ingredients, pour half the batter into one pan.
You can top it with some coconut shreds, nuts swirl in dark chocolate chips or whatever your heart desires. 

For the other half of the batter (Still in the mixer, added:
2 TBSP of PB2
2 TBSP of peanut butter

Mixed it up again and poured it into a pan. Then I took about another tablespoon of peanut butter and swirled it on the top. -Extra yumminess!

Bake:

Set your oven to 350F and bake these guys for about 45 minutes or until the knife comes out clean.

Slice and enjoy! With coffee, PB, ....by itself... for breakfast, snack... YUMMMMM!

Chocolate Protein Oatmeal Cookies

Here I go again... I was at a friends house and shes a GREAT cook, but not a baker so I said "I'll make cookies and let me blow your mind with these!" I was like "trust me, they're SO EASY and I've never made this type before"... haha Ok... now who's gonna trust that. I pulled out the over ripe banana and some of my protein I had in my gym bad, opened her cabinet and searched... A little of this, a little of that! This will do it...

Ingredients:

2 Med Bananas
1 c Oatmeal
2 TBSP Ground Flax
1/2 c Vanilla Whey Protein
1/4 c Cocoa Powder
Dash of cinnamon
1/4 c Pecans
1/4 c Dark Chocolate Chips

With your blender mash the bananas first then add the rest of the dry ingredients. Nuts and Chocolate chips are optional but trust me its worth it!

Once the dough is mixed, use an ice cream scoop to size cookies and drop onto a cookie sheet. Use the back of the scoop to press the cookie down, a little.

Bake at 350 for 25 mins or until golden brown.

See... So easy a cave man can do it! 

Makes about 12 cookies

Banana Walnut Protein bar





 Its always good to pack protein bars for the car or gym bag, especially when you're going to be gone on trips. Here I am headed out the door on a weekend trip and I needed something to take on the go... I had an over ripe banana on hand, PERFECT for baking! Now what...

Ingredients:

1 Banana
1/4 C Oat flour
1 C Vanilla Whey Protein Powder
1/2 C Walnuts
1/2 TSP Cinnamon

Mix all ingredients until thoroughly blended. It will be very sticky. 

Coat a loaf pan with coconut oil and fill with batter.

Move fast, it gets sticky and its harder to work with if you take your time.

Bake @ 350 for 15 minutes. 

These will be dry and chewy but they accomplished my goal of having a banana bar that wouldn't crumble in my gym bag but also be able to last without going bad so fast!

Banana Protein Pancakes



I'm back from my work trip and SO EXCITED
to be home and of course there is nothing in our refrigerator... I wonder how my .husband lives while I'm gone, but he survives and that's all that matters. hehee, Love Him! Thank goodness we always have almond milk and egg whites! and of course, my baking cabinet is always prepared! Well since I'm home I was definitely in NEED of Protein Pancakes but wanted to make a different type.

Ingredients:

1 med mashed Banana 
1/2 C. Oat Flour
1/4 C. Coconut Flour
2 TBSP ground Flax seed
dash of cinnamon
1/2 C. Vanilla Whey Protein Powder
1 TBSP vanilla Extract
1 C. liquid Egg Whites
1 TSP Baking Powder/ Xanthan Gum 
1 C. Vanilla Almond Milk-Unsweetened

First, mash the banana with a blender.

Then mix in all the delicious dry ingredients.

Next, add the liquid ingredients...
beat well.

Preheat your griddle and top with coconut oil and pour the batter on.
Wait until the bubbles come through and FLIP!

When they're done top them with NATURAL maple syrup, Honey, PB, Almond Butter!... Or whatever Else!

Enjoy another Breakfast option!!


Banana Oatmeal Coconut Cookies

 


We were having a dinner party and I needed a dessert fast.... I was told banana cookies were good but shoot I wasn't sure what a recipe included. So I did what I do best... Bake on a fly! I threw in 2 over ripe bananas and went from there! As far as these were concerned... WINNING! 

Ingredients:

2 Med Bananas

My husband said it was an explosion of flavor in his mouth and I second that! They were soft and chewy, tasty and all around delicious! No one complained and everyone took home the extras... I was sad for that part.
 
I can't wait to make these yummy cookies again with a different mixture and protein!

Banana Protein Muffin


Growing up my Granny made the absolute best banana bread ever! As I became more and more of a health nut the banana bread recipe slowly changed to a healthier version and now its a banana protein bread/Muffin! ~I'm not sure but never mentioned before but of course all these muffins recipes can be made into bread recipes just putting it in a loaf pan, easy!~

Of all the muffin recipes I make I think this one is my favorite because it reminds me of my Granny! And truly, Who doesn't love a Banana Walnut Muffin!?

Ingredients:

1/2 C (ground) Oatmeal Flour
1/4 C Coconut Flour
2 TBSP Flax
1 TSP Baking Soda
1 TSP Cinnamon
1/2 C Vanilla Whey Protein Powder (1 Scoop)
1 TBSP Vanilla Extract
3 egg whites
1 Large Mashed Banana (2 medium) When in doubt use 2! MMMM...
2 TBSP Coconut Oil

1/2 C Almond Milk- Unsweetened Vanilla
1/2 Walnuts
1/2 C Dark Chocolate Chips (optional)
  ~If you're missing something, have no fear, for substitutions click HERE!

Step 1: Mash banana(S) with a blender.

Step 2: Sift in all the dry ingredients together into the mixing bowl. If you want your muffins to rise beautifully, sift the big flour chunks out. If you don't care, don't sift.
 
Step 3: Add in all the rest of your wet ingredients and blend away!!!

Take a taste sample with your finger... MMMM
Scrape sides and blend again! 

Step 4: Now you get to choose if you want to add NUTS! Walnuts are perfect for these! OOOOH and dark chocolate chips! I use Ghirardelli 60% Cocoa Chips.

**Make sure you oil your pan very well, I use coconut oil, then pour the batter in! Don't forget tolick the bowl!

Step 5: Bake at 350F for 30 mins or until a toothpick comes out clean.

Step 6: Best step of all.... ENJOY!!



Banana Choco-PB Ice Cream


I call it Monkey Mush ... I had over ripe bananas sitting in my kitchen. At this point its either make Banana bread or muffins, which I do all the time! make a banana protein smoothie or freeze them for later use... I did just that, Sliced them up and tossed them into the freezer. OK not literally- Ameilia Bedelia! Put them in a container or baggies first, then freeze. So finally a week went by and I was craving Ice Cream and NO... Im a weirdo when I crave Ice Cream I don't just go to the store and by it the amount of CRAP and sugar they put in it always makes me cringe and my stomach imagines the pain. Unless I can find a natural ice cream joint I suppress the crave. UNTIL TODAY!! HA HA!
How about Banana, Chocolate Chunk and PB Ice Cream... We will SEE!

INGREDIENTS:

1.5 C Frozen Sliced Bananas
.5 C Almond Milk -Unsweetened
1 Scoop (1/3C) Chocolate Protein Powder
2 TBSP PB2
85% Dark Chocolate Chunks
Dash of Cinnamon

Blend AWAY!

Swirl in
1 TBSP Natural Peanut Butter

Then fill a container and freeze for a couple hours.
 






















Raw Version without Protein:
INGREDIENTS:

1.5 C Frozen Sliced Bananas
.5 C Almond Milk -Unsweetened
1 TBSP Cocoa powder
2 TBSP PB2
85% Dark Chocolate Chunks
Dash of Cinnamon

Blend AWAY!

Swirl in
1 TBSP Natural Peanut Butter
