Banana Bread


Just like Grannys banana bread but WAY healthier and with all the fix-ins!

I love those days when I walk into the grocery store and they have bagged over ripe bananas on sale! Today was one of those days! When I see those sacks of bananas I can't help myself but buy them and think Banana bread, banana bread mmmmmm, grannies wonderful banana bread!

Like most of the time I bake I can never decide what flavor I'm going for a so in the case of a large recipe like this banana bread I can make two types easy. I always start off with the basics keeping in mind what I might want to change at the end, it's harder if the recipes are total opposites but when they can be pretty similar it makes it easy.

Ingredients:

  
3 medium bananas
1/2 cup whole wheat flour (or another type)
1 cup of oatmeal flour
1/2 cup coconut flour
1 c vanilla whey protein powder (or more flours)
1 tbsp vanilla extract
3 egg whites
2 tablespoons flax
1/2 cup of plain Greek yogurt
1/2 cup apple sauce
1/2 cup of almond milk
1/2 Nuts (optional)
1/2 Dark chocolate chips (optional)

Mix:

For banana bread I always start off with mashing my bananas in my mixing bowl.

Next add in the rest of the ingredients and mix well!

I always, ALWAYS add nuts to my banana bread! My choice is pecans but all types work. *When making multiple types I stir these in once the batter is in the loaf pan.

Heres the part where you make 2 types of banana bread, if desired :)
Once you combined all my basic ingredients, pour half the batter into one pan.
You can top it with some coconut shreds, nuts swirl in dark chocolate chips or whatever your heart desires. 

For the other half of the batter (Still in the mixer, added:
2 TBSP of PB2
2 TBSP of peanut butter

Mixed it up again and poured it into a pan. Then I took about another tablespoon of peanut butter and swirled it on the top. -Extra yumminess!

Bake:

Set your oven to 350F and bake these guys for about 45 minutes or until the knife comes out clean.

Slice and enjoy! With coffee, PB, ....by itself... for breakfast, snack... YUMMMMM!

Protein Almond Bread

 I wanted to make an almond protein bar, a little different that the other times I've made one but this wasn't working the way I had planned. obviously this is not a protein bar recipe but instead a protein bread recipe... BUT how?! I say its luck, I really have never ruined anything in the kitchen... and when I make mistakes they become INCREDIBLE inventions!

Ingredients:

1/2 c Almond Meal
1/2 c Vanilla Whey Protein
3 TBSP Flax Seed
1 TSP Almond Extract
2 TBSP Coconut Oil
2 TBSP Hot Water
1 TBSP Coconut Butter
1 TSP Baking Soda
1/4 c Almond Milk
1/4 c Egg Whites

Mix together all your dry ingredients then slowly incorporate your wet ingredients.


Pour into a loaf pan lightly coated with coconut oil.

Bake @ 350 F for 20-25 minutes until lightly brown and a toothpick comes out clean.

I was so shocked when I opened the oven to find this delightful treat! It rose beautifully! Its fluffy and moist yet tasty and FULL of Protein!

Top it with some peanut butter and LORD HAVE MERCY! YUMMM!

Sometimes accidents make the best treats... hehe!

Honey Nut Bread

We dont eat much bread, pasta or wheat in our house but my husband came home one day with a craving for a PB&J. Completely understandable... WHO DOESN'T LOVE A PB&J!? He said I really wish we had bread... I replied "Ok, Honey I can try to make some"... Wheat bread? or Paleo/Gluten Free bread? ... After spending about an hour searching for a decent bread recipe I said the hell with it I'm making one up!
and then here it goes... my first attempt at a oat, nut, grain, healthy honey bread...

Ingredients:

1/2 C Oat Flour (Ground Oatmeal)
1/2 C Coconut Flour
1/4 C Whole Wheat Flour
1/4 C Almond Flour
2 TBSP Wheat Germ
4 TBSP Ground Flax Seed
1.5 TSP Cinnamon
2 TSP baking Powder
2 TSP Baking Soda
1/4 C Applesauce (Natural Unsweetened)
1/2 C honey
3 TBSP Coconut oil
6 Egg Whites

FIRST- I sifted all my dry ingredients to ensure it was light and fluffy so it could rise.
then I added all the wet ingredients.

Its thick... Thicker than a cake batter.

Pour it into an oiled loaf pan and Bake @ 350 F

While the bread is baking I chopped
Pecans
Almond
Oatmeal
you can chop them as fine or think as you want.
on the side melt either coconut oil or butter, whatever you prefer.

Take the bread out -the sooner the better....top with the nuts and oil, then lightly drizzle honey over everything.
Stick it back in and let it finish baking until knife comes out clean.

 Let the bread cool completely then slice.  Later you can toast it and top it with anything you desire...
For my husband tho... Peanut Butter and Jelly was it! YUMMY TOO!!
