The other night after dinner my husband asked for a snack and of course because we try to eat lean and clean it was another opportunity to create a wonderful dessert. I wanted something a little late but tasty so I decided to make a low sugar, gluten free peanut butter cookie...
Ingredients:
1/2 cup Coconut Flour
1/4 cup Brown Rice Flour
1/2 cup (ground) Oatmeal Flour (Make sure they are certified Gluten free Oats)
1/8 cup PB2

1 tsp Baking Soda
6 tbsp Peanut Butter
1/4 cup Coconut Oil
1/8 cup Peanut Oil -(For free: it tops all natural PB, I pour it into a small container and save it)
Dash of cinnamon
1 teaspoon Vanilla Extract
1/4 cup Egg Whites
1/8 cup Honey
Optional- 1/2 cup Dark Chocolate Chips
Optional- 1/2 cup Pecans
6 tbsp Peanut Butter
1/4 cup Coconut Oil
1/8 cup Peanut Oil -(For free: it tops all natural PB, I pour it into a small container and save it)
Dash of cinnamon
1 teaspoon Vanilla Extract
1/4 cup Egg Whites
1/8 cup Honey
Optional- 1/2 cup Dark Chocolate Chips
Optional- 1/2 cup Pecans
Make sure you melt your coconut oil first
Then add all ingredients to your mixing bowl and whip together. Slowly add in your dry ingredients and continue to mix.

The dough should look like normal cookie dough consistency not too wet but it should not crumble apart. If it crumbles add more oil. If its gooey add a little more flour.
Former cookies and a small balls put them on a baking pan with parchment paper then press down creating lines with a fork.
Bake at 350 for 20 minutes or until the bottom of the cookie is golden brown.
Makes 1 dozen peanut butter cookies
These are really tasty dipped in almond milk or coffee.
*Reminder* these are on the very low sugar side so if you like things a little sweeter go ahead and add more equal parts honey and stevia.
